For the Chicken

  • 2 pieces Chicken Breasts can substitute with thighs for a juicier option
  • 2 tablespoons Honey cook until bubbly for enhanced flavor
  • 2 tablespoons Lime Juice fresh juice is optimal for brightness
  • to taste Seasonings (Salt, Pepper, etc.) adjust according to personal taste

For the Rice

  • 1 cup Rice brown rice can be used for extra fiber; quinoa is a lower-carb option

For the Avocado

  • 2 pieces Avocado choose ripe but firm avocados to slice neatly

Optional Toppings

  • 1/4 cup Toasted Nuts or Seeds great for a different texture on top
  • 1 piece Sliced Jalapeños perfect if you love a bit of heat
  • 1 cup Diced Mango or Pineapple adds a refreshing note to the dish

Instructions
 

Preparation

  • Pound the chicken breasts to an even thickness using a mallet or rolling pin. Season well with salt and pepper.
  • Mix the honey and lime juice together in a mixing bowl.
  • Heat a skillet over medium-high heat and add a splash of olive oil. Cook the chicken for 6-7 minutes on each side, brushing with the honey-lime glaze in the last minute.
  • Prepare the rice according to the package instructions. Fluff it with a fork once done.
  • Slice the avocado just before assembly to maintain freshness.
  • Layer your stack by placing a portion of rice at the bottom, followed by the chicken, and topped with avocado slices.

Notes

To avoid browning, slice your avocado just before assembly or brush lightly with lime juice. Store components separately for freshness.
