Ingredients
  

For the Stuffing

  • 4 mushrooms Portobello Mushrooms Cremini mushrooms can be used if portobellos are unavailable.
  • 2 cups Fresh Spinach Chopped, or 1 cup frozen.
  • 1 cup Ricotta Cheese
  • 0.5 cup Cream Cheese Softened.
  • 0.5 cup Shredded Mozzarella Cheese
  • 0.25 cup Grated Parmesan Cheese
  • 2 cloves Garlic Minced.
  • 1 teaspoon Italian Seasoning
  • to taste Salt
  • to taste Pepper

For the Prep

  • 1 tablespoon Olive Oil Or melted butter.
  • Fresh Parsley For garnish.

Directions

  • Preheat the oven to 375°F (190°C).
  • Clean the portobello mushrooms using a damp cloth. Carefully remove the stems and gills.
  • Arrange the cleaned mushrooms on a baking sheet with the gill side facing up. Drizzle them with olive oil and season with salt and pepper.
  • Sauté minced garlic in a skillet with a bit of olive oil for about 1 minute. Add the spinach and wilt for 2-3 minutes. Cool slightly.
  • Combine ricotta, cream cheese, mozzarella, Parmesan, sautéed spinach, Italian seasoning, salt, and pepper in a bowl.
  • Fill each mushroom cap with the cheese mixture, pressing down gently.
  • Bake stuffed mushrooms for 20-25 minutes until tender and golden brown.
  • Let cool for a few minutes. Garnish with fresh parsley before serving.
  • Serve warm.

Notes

Optional: Drizzle with balsamic reduction for extra flavor.
