  • Spread the coated carrots and parsnips on the prepared baking sheet in a single layer to avoid overcrowding.
  • Roast in the oven for 25-30 minutes, stirring halfway through, until the vegetables are tender and golden brown.
  • Garnish with freshly chopped parsley after transferring to a serving dish.
