Ingredients
  

For the Soup

  • 1 lb Bratwurst sliced into rounds; can substitute with Italian or turkey sausage
  • 2 tbsp Olive Oil for sautéing vegetables
  • 1 medium Onion diced; yellow or white onions work best
  • 2 cloves Garlic minced; fresh garlic is recommended
  • 2 medium Carrots sliced; frozen carrots can be used if fresh are unavailable
  • 2 stalks Celery diced; can be omitted
  • 6 cups Chicken or Vegetable Broth gluten-free versions available
  • 2 medium Potatoes diced; sweet potatoes can be used for sweetness
  • 1 tsp Dried Thyme or use three times the amount of fresh thyme
  • 1 tsp Dried Oregano Italian seasoning is a great alternative
  • 1 tsp Black Pepper adjust to taste
  • 1 tsp Salt adjust based on the saltiness of your broth
  • 2 cups Kale or Spinach optional; other leafy greens can also be used
  • 1 tbsp Dijon Mustard optional for tanginess

Instructions
 

Cooking Instructions

  • In a large pot, heat olive oil over medium heat until shimmering.
  • Brown the sliced bratwurst for about 5-7 minutes, stirring occasionally, until nicely caramelized. Remove and set aside.
  • Sauté diced onion for 3-4 minutes until translucent, then add minced garlic and sauté for an additional minute.
  • Incorporate sliced carrots and diced celery into the pot, cooking for 5 more minutes.
  • Pour in the chicken or vegetable broth and bring to a gentle simmer.
  • Stir in diced potatoes, dried thyme, oregano, black pepper, salt, and return the browned bratwurst.
  • Cover and cook for 15-20 minutes until the potatoes are tender.
  • If using, stir in kale or spinach and cook for 2-3 minutes until wilted.
  • Stir in Dijon mustard if desired, taste, and adjust seasoning.
  • Ladle the soup into bowls and garnish with fresh parsley and Parmesan cheese if desired.

Notes

Serve with crusty bread or a fresh side salad for a complete meal.
