Preparation

  • Butterfly and pound the boneless, skinless chicken breasts until they are about ¼ inch thick.
  • Set your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Organize three bowls: one with whole wheat flour, another with beaten eggs, and the last with a mixture of breadcrumbs, Parmesan, and seasonings.
  • Dredge each chicken cutlet in flour, dip into eggs, and press into the breadcrumb mixture.
  • Arrange the coated chicken cutlets on the baking sheet and bake for 15 minutes, flip and bake for an additional 15 minutes.
  • Spoon marinara sauce over each cutlet and sprinkle with shredded mozzarella. Broil on high for about 2 minutes.
