  • 4 tablespoons Unsalted Butter Can substitute ghee for a dairy-free option.
  • 4 cloves Garlic (Minced) Infuses butter with aromatic depth.

For the Crispy Potatoes

  • 1.5 pounds Baby Potatoes Regular potatoes can be used if needed.
  • 2 tablespoons Olive Oil Avocado oil is a suitable substitute.
  • 1 teaspoon Paprika Adds a pop of color and smokiness.

For the Broccoli

  • 4 cups Broccoli Florets Adds vibrancy and nutrients.
  • 1 teaspoon Salt Essential seasoning.
  • 1 teaspoon Pepper Essential seasoning.

Cooking Instructions

  • Preheat the oven to 425°F (220°C).
  • Toss halved baby potatoes with olive oil, paprika, salt, and pepper, then spread on a baking sheet.
  • Roast potatoes for approximately 20 minutes until golden and crispy.
  • Toss broccoli florets with olive oil, salt, and pepper and add to the baking sheet after 20 minutes of roasting potatoes.
  • Roast for another 15-20 minutes until potatoes are crispy and broccoli is tender.
  • In a skillet, melt unsalted butter, then sauté minced garlic for 1 minute before stirring in lemon juice, salt, and pepper.
  • Cook salmon fillets skin-side down in the skillet for 4-5 minutes, flip, then cook for another 3-4 minutes.
  • Serve salmon with crispy potatoes and broccoli, drizzled with garlic butter sauce and garnished with lemon slices.

Notes

Feel free to substitute broccoli with asparagus or green beans to vary the dish. Extra lemon juice can be squeezed on before serving for added flavor.
