Ingredients
  

For the Bowl

  • 1 cup Quinoa rinsed
  • 2 cups Vegetable Broth for flavor
  • 1 can Chickpeas dried
  • 1 head Cauliflower cut into florets
  • 1 large Sweet Potato cubed into 1/2 inch pieces
  • 2 tablespoons Extra Virgin Olive Oil for roasting

For the Seasoning

  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Cumin
  • to taste Sea Salt

For the Dressing

  • 1/4 cup Tahini premium quality
  • 2 tablespoons Lemon Juice fresh-squeezed
  • 1 clove Garlic minced
  • 1 tablespoon Maple Syrup optional
  • to taste water Warm Water to adjust thickness

For the Garnish

  • 1/4 cup Fresh Parsley chopped
  • 1 small English Cucumber diced
  • 1/2 cup Kalamata Olives halved

Instructions
 

Preparation

  • Rinse quinoa in a fine-mesh strainer to remove bitterness.
  • In a saucepan, combine rinsed quinoa and vegetable broth. Bring to a boil, cover, and let simmer for 15 minutes. Remove from heat and let sit covered for 5 minutes before fluffing with a fork.
  • Preheat oven to 400°F (200°C).

Cooking Vegetables

  • On a large baking sheet, mix the dried chickpeas, cauliflower florets, and cubed sweet potato. Drizzle with olive oil, smoked paprika, cumin, and sea salt. Roast for 30 minutes, tossing halfway through.

Making Dressing

  • In a small jar, whisk together tahini, lemon juice, minced garlic, maple syrup, and warm water until smooth.

Assembling Bowls

  • Divide quinoa into bowls and top with roasted vegetables, parsley, cucumber, and olives. Drizzle with dressing before serving.

Notes

For added flavor, consider adding chili flakes as an optional garnish.
