  • 2 cups Chicken Broth Ensure it fully covers the rice for best results.
  • 1 cup Tzatziki Sauce Opt for store-bought or homemade.
  • 2 tablespoons Olive Oil For greasing the dish.
  • 1/2 cup Feta Cheese Optional topping for added creaminess.

For Serving (Optional)

  • 1/4 cup Fresh Herbs (like parsley or dill) Adds a burst of freshness.
  • 1 package Pita Bread For soaking up flavors.

How to Make

  • Preheat your oven to 375°F (190°C) and generously grease a baking dish.
  • In the prepared baking dish, layer the uncooked jasmine or brown rice evenly. Place the chicken breasts or thighs on top, then pour the tzatziki sauce and chicken broth over the layers.
  • Cover the dish with aluminum foil and bake in the preheated oven for 30–40 minutes, or until the chicken is thoroughly cooked and the rice is tender.
  • If using feta cheese, sprinkle it over the top and bake uncovered for an additional 5 minutes.
  • Once out of the oven, let the casserole cool slightly before serving. Garnish with fresh herbs if desired.

Notes

For added freshness, you can sprinkle with lemon juice.
