Ingredients

  • 1 cup Greek Yogurt consider dairy-free yogurt for a lighter version
  • 2 cloves Minced Garlic always go for fresh for best results
  • 1 medium Grated Cucumber squeeze out excess moisture for better texture
  • 2 tablespoons Dill dried dill can work in a pinch
  • 2 tablespoons Lemon Juice vinegar serves as an alternative if needed
  • 1 teaspoon Oregano Italian seasoning can replace oregano
  • 1 teaspoon Paprika

Instructions
 

How to Make

  • Preheat your oven to 375°F (190°C) to get it nice and warm for baking.
  • Spread uncooked rice evenly in a 9×13 inch baking dish.
  • Pour chicken broth over the rice without stirring it.
  • Mix Greek yogurt, minced garlic, grated cucumber, dill, lemon juice, oregano, paprika, salt, and pepper in a separate bowl.
  • Pat chicken breasts dry with a paper towel, drizzle with olive oil, and place them on top of the rice.
  • Generously spread tzatziki sauce over each chicken breast.
  • Cover the dish tightly with foil and bake for 50-60 minutes.
  • Rest the dish for 5 minutes before serving.
