Ingredients
  

For the Chicken Marinade

  • 2 lbs Chicken Breasts Can substitute with chicken thighs.
  • 1/4 cup Honey Can substitute with maple syrup or agave.
  • 1/4 cup Lime Juice Preferably freshly squeezed.
  • 1 tbsp Lime Zest Freshly zested for best potency.
  • 2 cloves Garlic Minced fresh garlic recommended.
  • 1 tsp Ground Cumin Adjust to personal taste.
  • 1 tsp Salt Adjust to preference.
  • 1/2 tsp Pepper Adjust to preference.

For the Rice Base

  • 1 cup Jasmine Rice Basmati rice can be a good alternative.
  • 2 cups Chicken Broth Can substitute with vegetable broth.

For the Avocado Mix

  • 2 medium Avocado Mix with lime juice if prepared in advance to prevent browning.
  • 1/4 cup Red Onion Can be replaced with green onions.
  • 1/4 cup Fresh Cilantro Omit if cilantro is not preferred.
  • 1 tbsp Olive Oil Avocado oil can be used for a neutral flavor.

For Serving

  • 2 pieces Lime Wedges Garnish to enhance lime flavor.

Cooking Instructions

  • In a mixing bowl, whisk together honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper until well combined.
  • Place the chicken breasts in a resealable bag or shallow dish. Pour the marinade over the chicken and let it sit for 30 minutes to 2 hours.
  • Rinse jasmine rice under cold water until the water runs clear. Transfer to a saucepan with chicken broth, cover, and cook over medium heat for about 15 minutes.
  • Preheat the grill to medium-high heat. Grill the chicken for 6–7 minutes on each side until it reaches 165°F (75°C) and is golden brown.
  • In a bowl, combine diced avocado, chopped red onion, fresh cilantro, and olive oil. Mix gently to maintain the creamy texture.
  • On each plate, layer cooked jasmine rice, top with grilled chicken, and finish with the creamy avocado mix. Serve with fresh lime wedges.

Notes

For optional spice, sprinkle with chili flakes. Best served fresh immediately after assembling.
