Ingredients
  

For the Protein

  • 1 kg Boneless, skinless chicken breasts or thighs Can swap with beef, tofu, or shrimp.

For the Base

  • 2 cups Long-grain white rice or brown rice Brown rice may require more liquid and longer cooking time.
  • 15 oz Black beans Rinse and drain before adding.

For the Veggies

  • 1 cup Corn Canned or frozen, no prep needed for canned.
  • 1 Medium onion Dice finely for quicker cooking.
  • 1 Bell pepper Red or green; substitute with other vegetables if desired.

For Cooking

  • 2 tablespoons Olive oil Can use any neutral oil.

For the Spices

  • 1 teaspoon Ground cumin Smoked paprika is a great alternative.
  • 1 teaspoon Chili powder Adjust to your preferred spice level.
  • 1 teaspoon Garlic powder Fresh minced garlic can replace it.
  • Salt and pepper To taste.

For the Finishing Touches

  • 1 Juice of 1 lime Fresh is best.
  • Fresh cilantro For garnish; omit if not a fan.
  • Optional toppings Avocado, cheese, sour cream, or jalapeños.

How to Make One Pan Chicken Burrito Bowl

  • Start by dicing the chicken into bite-sized pieces, then season it well with salt, cumin, chili powder, and garlic powder. Meanwhile, chop the onion and bell pepper, and rinse the black beans.
  • Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and sauté until golden brown, about 5-7 minutes.
  • Stir in the chopped onion and bell pepper. Sauté until they become tender, around 3-4 minutes. Then, mix in your rice, black beans, and corn.
  • Pour in 1.5 cups of water (or broth) and bring to a boil. Reduce heat, cover, and let simmer for 15-20 minutes until the rice is cooked.
  • Once the rice is fluffy, fluff with a fork, squeeze lime juice over the top, and garnish with cilantro and optional toppings.

Notes

Store leftovers in an airtight container for up to 3 days. For longer storage, freeze the dish for up to 2 months.
