Ingredients

For the Batter

  • 1 cup Butternut Squash Puree Provides moisture and natural sweetness; you can use canned puree if time is tight.
  • 1 cup All-Purpose Flour Substitute with a 1:1 gluten-free flour blend, ensuring it contains xanthan gum.
  • 1 tbsp Baking Powder Acts as a leavening agent for lightness.
  • 1 tsp Cinnamon Adds a warm flavor; using freshly ground enhances the aroma.
  • 1/2 tsp Nutmeg Fresh ground is best for maximum taste.
  • 1/4 tsp Salt Balances the sweetness.
  • 1/2 cup Coconut Sugar Adds a hint of caramel sweetness.
  • 2 large Eggs For a vegan option, use flax eggs.
  • 1/2 cup Milk Any milk works, including plant-based alternatives.
  • 1 tsp Vanilla Extract Enhances the overall flavor.
  • 1/4 cup Melted Coconut Oil Feel free to use vegetable oil or melted butter as substitutes.

Optional Topping

  • Whisk together all-purpose flour, baking powder, cinnamon, nutmeg, and salt in a mixing bowl.
  • Combine squash puree, eggs, coconut sugar, milk, vanilla extract, and melted coconut oil in another bowl until smooth.
  • Fold wet mixture into dry ingredients gently until just combined.
  • Spoon or pipe the batter into the donut pan, filling each mold about ¾ full.

  • Cool in the pan for 5 minutes, then transfer to a wire rack. Sprinkle with cinnamon sugar if desired.

Notes

For a delightful breakfast treat, consider pairing with a dollop of yogurt. Store cooled donuts in an airtight container at room temperature for up to 2 days, or refrigerate for 5 days.
