Ingredients
  

Marinade

  • 4 pieces chicken thighs can substitute with chicken breast
  • 0.25 cup olive oil moistens the marinade
  • 3 cloves garlic minced
  • 0.25 cup lemon juice freshly squeezed
  • 2 tablespoons red wine vinegar can be swapped with apple cider vinegar
  • 1 tablespoon dried oregano can also use fresh oregano
  • 1 teaspoon ground cumin
  • salt to taste
  • black pepper to taste

Bowls

  • 4 cups cooked rice or cauliflower rice for low-carb
  • 1 cup cherry tomatoes sliced or halved
  • 1 cup cucumber diced
  • 0.5 cup red onion thinly sliced or pickled
  • 0.5 cup kalamata olives optional
  • 0.5 cup feta cheese can be left out for vegan version
  • 0.25 cup fresh parsley for garnish

Instructions
 

Preparation

  • In a large bowl, combine olive oil, minced garlic, lemon juice, red wine vinegar, dried oregano, ground cumin, salt, and pepper. Mix until well blended and fragrant.
  • Place chicken thighs in a resealable bag. Pour the marinade over them, ensuring each piece is thoroughly coated. Refrigerate for at least 30 minutes, or for optimal flavor, up to 4 hours.
  • Preheat your grill or skillet to medium-high heat.
  • Remove excess marinade from the chicken thighs. Grill or sear them for 5-7 minutes on each side, checking for an internal temperature of 165°F.
  • Give the cooked chicken a few minutes to rest off the heat, then slice into thin strips.
  • In serving bowls, layer a generous scoop of cooked rice, followed by sliced chicken, cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese.
  • Drizzle each bowl with creamy tzatziki sauce and top with fresh parsley.
