Equipment

  • Mixing bowl
  • Pie pan
  • Rolling Pin
  • Wire rack

Ingredients

For the Crust

  • 1 cup all-purpose flour Can substitute with gluten-free flour
  • 1/2 cup unsalted butter Can swap with margarine
  • 1/4 cup granulated sugar Use coconut sugar for lower glycemic option
  • 1 tsp salt Opt for sea salt for milder taste
  • 3-4 tbsp ice water Cold milk can be used for richer flavor

For the Filling

  • 1 cup corn syrup (light or dark) Honey or maple syrup as substitutes
  • 1/2 cup unsweetened cocoa powder Dark cocoa will intensify flavor
  • 3 large eggs Consider flax eggs as vegan alternative
  • 1/2 cup melted unsalted butter Can use coconut oil for dairy-free
  • 1 tsp vanilla extract Almond extract offers a unique twist
  • 1 cup pecans (chopped, plus extra for topping) Any nut can be used
  • 1 cup semi-sweet chocolate chips Dark chocolate chips for less sweetness

Instructions

Pie Preparation

  • In a mixing bowl, combine all-purpose flour, granulated sugar, and salt. Cut in the cold unsalted butter until you achieve coarse crumbs. Gradually add ice water until a dough forms. Shape it into a disk, wrap with plastic wrap, and chill for at least 30 minutes.
  • While the dough chills, set your oven to 350°F (175°C) to ensure it’s hot enough for baking.
  • Once chilled, roll the dough on a floured surface until it fits a 9-inch pie pan. Carefully place it in the pan, trimming any excess and crimping the edges for a lovely finish.
  • In a large bowl, whisk together the corn syrup, granulated sugar, unsweetened cocoa powder, large eggs, melted unsalted butter, and vanilla extract until smooth and free of lumps.
  • Pour the rich chocolate filling into the prepared crust. If desired, sprinkle extra chopped pecans on top for added crunch and flavor.
  • Place the pie in the preheated oven and bake for 50-60 minutes, until the center is slightly jiggly but set.
  • Allow the pie to cool completely on a wire rack. Serve at room temperature or slightly warmed.

Notes

Serve with whipped cream or a scoop of vanilla ice cream for an indulgent touch. Optional: Drizzle with chocolate sauce for an extra special finish.
