Ingredients
  

For the Brownie Base

  • 1 cup unsalted butter Fat for richness and moisture. Use margarine if butter isn't available.
  • 1 cup granulated sugar Sweetness and moisture. Can substitute with coconut sugar for a healthier option.
  • ½ cup brown sugar Adds depth and moisture due to its molasses content. Dark brown sugar can be used for a richer flavor.
  • 3 large eggs Provides binding and structure. Room-temperature eggs mix better into batter.
  • 2 teaspoons vanilla extract Flavor enhancer. Almond extract can be used for a different flavor profile.
  • ¾ cup all-purpose flour Provides structure. For gluten-free, use an all-purpose gluten-free blend.
  • ½ cup unsweetened cocoa powder Adds rich chocolate flavor. Dutch-processed cocoa will yield a milder flavor.
  • ½ teaspoon salt Balances sweetness and enhances flavors.
  • ¼ teaspoon baking powder Leavening agent for a light texture.

For the Mix-Ins

  • 1 cup semi-sweet chocolate chips Melty pockets of chocolate throughout the brownies. Dark chocolate chips for a more intense chocolate flavor.
  • 1 and ½ cups mini marshmallows Adds gooey sweetness and chewiness. Use chopped large marshmallows if mini aren’t available.
  • ¾ cup chopped walnuts or almonds Adds crunch and nuttiness. Can be omitted or replaced with crushed pretzels for a salty crunch.

How to Make Decadent Rocky Road Brownies

  • Preheat your oven to 350°F (175°C). Line and grease an 8x8-inch baking pan.
  • In a microwave-safe bowl, melt the unsalted butter. Stir in both granulated and brown sugars until well combined and let it cool.
  • Beat the eggs into the butter mixture one at a time, followed by adding the vanilla extract. Mix until the mixture is glossy.
  • Sift the flour, cocoa powder, salt, and baking powder into the bowl. Gently fold these dry ingredients into your wet mixture.
  • Fold in the semi-sweet chocolate chips and choice of nuts until evenly distributed throughout the batter.
  • Pour half of the brownie batter into the prepared pan. Layer with mini marshmallows, then add the remaining batter and smooth the top.
  • Press a handful of additional marshmallows and chocolate chips onto the surface of the batter for an extra gooey topping.
  • Bake for 30-35 minutes. A toothpick inserted should come out with moist crumbs clinging to it.
  • Let the brownies cool completely in the pan for at least 1 hour before slicing into squares.

Notes

Optional: Drizzle some melted chocolate on top before serving for an extra indulgent touch.
