  • 2 pounds Yukon Gold Potatoes Quartered
  • 1/2 cup Unsalted Butter Total, divided
  • 3/4 cup Buttermilk Total, divided
  • 1 cup Water For boiling
  • 1 teaspoon Baking Soda
  • to taste Salt
  • to taste Pepper

Preparation Steps

  • In a large pot, add quartered Yukon Gold potatoes, unsalted butter, buttermilk, water, baking soda, and a generous pinch of salt. Stir gently and bring the mixture to a boil over medium-high heat.
  • Once boiling, cover the pot and reduce the heat to low. Allow the potatoes to simmer for 20-25 minutes, or until they’re tender when pierced with a fork. Stir occasionally to prevent sticking.
  • Remove the lid, increase the heat to medium, and continue cooking for an additional 3 minutes, letting some of the excess liquid evaporate.
  • Off the heat, add the remaining butter and use a potato masher to mash until smooth.
  • Gradually fold in the remaining buttermilk and taste for seasoning. Adjust salt and pepper as needed.
  • For a cheesy twist, stir in shredded cheddar cheese just before serving.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently to maintain creamy texture. Can be frozen for up to 2 months.
