Ingredients
  

For the Cake

  • 4 large eggs For vegan option, replace with aquafaba.
  • 1/2 cup granulated sugar Consider a sugar substitute for fewer calories.
  • 1/3 cup all-purpose flour Use gluten-free flour for a gluten-free version.
  • 1/3 cup unsweetened cocoa powder Dutch-process cocoa for deeper taste.
  • 1/4 teaspoon baking powder Ensure it's fresh.
  • 1/4 teaspoon salt Using kosher salt provides texture.

For the Chocolate Filling

  • 1 cup heavy cream Opt for coconut cream for non-dairy alternative.
  • 1/2 cup powdered sugar Leave out for a less sweet option.
  • 1 teaspoon vanilla extract Pure vanilla extract for best results.
  • 4 oz semi-sweet chocolate Melted and cooled.

For the Chocolate Ganache

  • 8 oz semi-sweet chocolate Chopped.
  • 1 cup heavy cream
  • 1 tablespoon unsalted butter

For Decoration

  • powdered sugar For dusting.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) for even baking.
  • Prepare a 15x10-inch jelly roll pan by lining it with parchment paper.
  • Beat together 4 large eggs and 1/2 cup granulated sugar until thick and pale, about 5 minutes.
  • Sift together 1/3 cup flour, 1/3 cup cocoa powder, 1/4 teaspoon baking powder, and 1/4 teaspoon salt, then fold into the egg mixture.
  • Spread batter in prepared pan and bake for 12-15 minutes.
  • Cool the cake in the pan for 5 minutes, then roll it in a kitchen towel sprinkled with powdered sugar.
  • Whip together 1 cup heavy cream, 1/2 cup powdered sugar, and 1 teaspoon vanilla extract until soft peaks form. Fold in melted chocolate.
  • Unroll cooled cake and spread filling over it, then roll it back up with seam side down.
  • Heat 1 cup heavy cream and pour over chopped chocolate. Stir until smooth to create ganache.
  • Pour ganache over rolled cake, allowing it to drip down the sides.
  • Refrigerate for at least 30 minutes to set ganache.
  • Dust with powdered sugar and decorate with optional garnishes before serving.

Notes

For an extra festive look, add some edible glitter!
