Making the Cheesecake Stuffed Strawberries

  • Beat the cream cheese in a mixing bowl until smooth and creamy. Gradually mix in the granulated sugar, egg, and vanilla extract until thoroughly combined and velvety.
  • Gently slice off the tops of the strawberries and use a small spoon to scoop out the centers, creating enough space for the cheesecake filling. Be careful not to break the sides!
  • Transfer your cheesecake filling to a piping bag or a resealable plastic bag with the corner snipped off. Carefully fill each strawberry until it's heaping full of that delicious mixture.
  • Place the filled strawberries on a plate and refrigerate them for about 2 hours. This allows the filling to firm up and makes the next steps easier.
  • In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in short bursts, stirring in between, until the mixture is smooth and glossy.
  • Dip each chilled stuffed strawberry into the melted chocolate, making sure it's completely covered. Let any excess chocolate drip off before placing them on a parchment-lined tray.
  • Allow the coated strawberries to set in the fridge for about 15 minutes. Once set, arrange them on a beautiful platter and serve chilled.
