Preparation

  • Preheat the oven to 350°F (175°C) and prepare an 8-inch round cake pan by greasing and flouring it.
  • Mix in a large bowl by whisking together flour, sugar, cocoa powder, baking powder, baking soda, and salt until combined.
  • Combine the wet ingredients by adding the egg, milk, vegetable oil, and vanilla extract to the dry mix. Stir in boiling water gradually.
  • Pour the batter into the prepared pan and bake for 30-35 minutes.
  • Cool the cake completely before removing it from the pan.
  • Prepare the cherry filling by combining cherries, sugar, cornstarch, lemon juice, and vanilla in a saucepan over medium heat.
  • Cook until thickened, about 5-7 minutes, then allow to cool.
  • Beat the cream by whipping heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.
  • Layer by starting to assemble the trifle in a dish or glasses, beginning with broken pieces of the chocolate cake at the bottom.
  • Add a layer of cherry filling over the chocolate cake pieces.
  • Top with a dollop of whipped cream, repeating the layers of cake, cherries, and whipped cream.
  • Finish with whipped cream on top, garnished with chocolate shavings and more cherries.
  • Refrigerate the trifle for at least 2 hours.
  • Serve by scooping portions into bowls and enjoy!

Notes

Cool completely before assembling. Use clear glass dishes for presentation. Refrigerate for at least 2 hours, but letting it sit overnight enhances flavor blending.
