How to Make Carrot and Chickpea Patties

  • Begin by grating your carrots and finely chopping the onion. Don't forget to rinse those canned chickpeas well to get rid of any extra saltiness.
  • Grab a fork or potato masher and mash the chickpeas in a bowl until they reach a chunky texture.
  • In a larger bowl, mix the mashed chickpeas with your grated carrots, chopped onion, minced garlic, breadcrumbs, egg, cumin, salt, and pepper.
  • Shape your mixture into about eight patties, each approximately one inch thick.
  • Heat olive oil in a skillet over medium heat. Cook the patties for about 5 minutes on each side, or until they're beautifully golden brown.
  • Once cooked, transfer the patties to serving plates and feel free to pair them with a delicious yogurt sauce or your favorite dip.

Notes

Remove excess moisture from grated carrots by squeezing them in a kitchen towel; this prevents soggy patties. Ensure the oil is hot before adding patties to achieve a crispy exterior. Cool cooked patties before freezing individually to last up to three months.
