Ingredients
  

For the Fritters

  • 2 cups Freshly grated carrots Drained
  • 1 cup All-purpose flour Can be substituted with gluten-free flour
  • 2 large Eggs Binding agent
  • 1 small Onion Finely chopped
  • 2 cloves Garlic Minced
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt Adjust to taste
  • 1/2 teaspoon Black pepper Adjust to taste
  • 1/4 cup Olive oil For frying

For the Yogurt Dip

  • 1 cup Greek yogurt
  • 1 tablespoon Lemon juice Freshly squeezed
  • 2 tablespoons Fresh dill or mint Chopped

Instructions
 

Preparation

  • Grate your carrots and place them in a clean kitchen towel to squeeze out excess moisture.
  • Finely chop the onion and mince the garlic.
  • In a large bowl, combine the grated carrots, chopped onion, minced garlic, flour, eggs, baking powder, salt, and pepper.
  • Mix until all ingredients are well incorporated, forming a thick batter.

Cooking

  • In a non-stick skillet, heat olive oil over medium heat until shimmering.
  • Drop 2 tablespoons of the batter into the hot skillet, flattening slightly to form fritters.
  • Fry for about 3 minutes on each side, or until golden brown.
  • Transfer fritters to a paper towel-lined plate to absorb excess oil.

Yogurt Dip

  • In a separate bowl, mix Greek yogurt, lemon juice, and your choice of fresh herbs.
  • Stir until smooth and adjust seasoning with salt and pepper to taste.

Serving

  • Serve the fritters warm alongside the zesty yogurt dip.

Notes

For a healthier alternative, bake the fritters at 400°F (200°C) for 20-25 minutes, flipping halfway.
