  • 1 package (16 oz) Gnocchi Store-bought or homemade.

How to Make Creamy Tomato Gnocchi Soup

  • Warm 2 tablespoons of olive oil in a large pot over medium heat until it shimmers invitingly.
  • Add 1 chopped medium onion and sauté for about 3-4 minutes, or until it becomes translucent and fragrant.
  • Stir in 2 minced garlic cloves, 1 diced carrot, and 1 diced celery stalk; cook for another 3-4 minutes, until softened.
  • Pour in 1 can (14.5 oz) of diced tomatoes with juices, stirring to meld the flavors together.
  • Add 4 cups of vegetable broth, 1 teaspoon of dried basil, 1 teaspoon of dried oregano, and salt and pepper to taste; mix thoroughly.
  • Increase the heat until the mixture reaches a rolling boil.
  • Lower the heat and let it simmer for 10 minutes, allowing the flavors to develop beautifully.
  • Stir in 1 package (16 oz) of gnocchi, cooking according to package instructions until tender.
  • Gently fold in 2 cups of fresh spinach, stirring until just wilted.
  • If desired, stir in ½ cup of heavy cream and heat through for another minute.
  • Taste and adjust the seasoning with salt and pepper.
  • Ladle the soup into bowls and garnish with grated Parmesan cheese before serving hot.

Notes

For a dairy-free option, replace heavy cream with coconut milk. You can add your favorite veggies or protein to customize your soup.
