Instructions
 

Preparation

  • Warm up olive oil in a large pot or Dutch oven over medium heat until it shimmers.
  • Add the diced onion and sauté for 3-4 minutes until softened and translucent.
  • Toss in fresh minced garlic, cooking for another 1-2 minutes until fragrant.
  • Incorporate the ground turkey, breaking it apart with a spoon. Cook until browned (about 5-7 minutes).
  • If necessary, drain any excess fat from the pot.
  • Add the diced bell peppers and cook for 3-4 minutes until they soften.
  • Stir in the diced tomatoes, broth, uncooked rice, dried oregano, basil, paprika, salt, and pepper.
  • Increase heat and bring the soup to a boil.
  • Reduce the heat to low, cover, and let it simmer for 20-25 minutes.
  • Give your soup a taste and adjust seasoning with additional salt and pepper as needed.
  • Ladle the hot soup into bowls, garnishing with your choice of optional toppings.

Notes
