Ingredients
  

For the Boats

  • 2 units Avocados ripe
  • 2 units Eggs small or large, depending on preference

For the Toppings

  • 2 tablespoons Bacon Bits or substitute with tomatoes/mushrooms
  • 1 tablespoon Cilantro or substitute with parsley/green onions

Optional Additions

  • 1/4 cup Cheese feta or cheddar
  • to taste Herbs & Spices dill or minced garlic

Preparation

  • Preheat the oven to 425°F (220°C).
  • Cut the ripe avocados in half and carefully remove the pit.
  • Arrange the avocado halves in a baking dish, crumpling aluminum foil around them for support.
  • Crack each egg into a small bowl before gently pouring it into the avocado halves.
  • Season with salt and pepper, adding cilantro and bacon bits.
  • Bake for 12-15 minutes until egg whites are set.
  • Garnish with additional cilantro or spices, and serve warm.

Notes
