Cooking Steps

  • In a large wok, heat vegetable oil over high heat until shimmering.
  • Add minced garlic and sliced Thai chilies to the hot oil. Stir-fry for about 30 seconds until fragrant.
  • Toss in thinly sliced chicken thighs and stir-fry for 3 to 4 minutes until fully cooked.
  • Stir in the chopped onion and red bell pepper; cook for 2 minutes.
  • Gently add the day-old jasmine rice to the wok and break apart any clumps.
  • Pour in soy sauce, oyster sauce, fish sauce, sugar, and white pepper. Toss everything together for a minute.
  • Remove the wok from heat and fold in the holy basil leaves gently.
  • Plate your rice and garnish it with fresh lime wedges and cucumber slices.

Notes

For extra flavor, drizzle with more soy sauce or a splash of lime juice when serving.
