Tomato and Avocado Make an Easy Summer Salad

Tomato Avacado SaladIt’s summertime and with that everyone is doing a little outdoor cooking. I’ve got a few nice shots of some great grilled chicken for another post. But, in the meantime, a question. What makes every BBQ better? If you said an awesome summer salad then you are correct. Even better than an awesome summer salad, how about one that’s unbelievably easy to make? Did someone say YES!

How about this:
1 Tomato, ripe
1 Avocado, ripe
3 tbsp, Blue Cheese, crumbled
Olive Oil
Sea Salt
Fresh Ground Black Pepper

Cut tomato in half, then slice. Drizzle olive oil over tomato. Sprinkle with sea salt and fresh ground black pepper. Dice avocado, sprinkle whole plate with blue cheese. If you have some extra time or if you like, place plate of sliced tomatoes in fridge to chill before adding avocado and cheese. If you would rather have the tomato at room temp, go for it.

We had this salad the other night. My wife put this great plate together, but, before I took the pictures said she didn’t think it was photo worthy. I disagree.
